I have to admit that I'm a big fan of chocolate chip cookies. They are sooooo delicious, specially when eating a few minutes after taking them out of the oven.

225g unsalted butter, at room temperature
150g caster sugar
200g light brown sugar
2 large eggs
200g plain flour
200g white bread flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons vanilla extract
300g dark chocolate, roughly chopped

Makes 16 large cookies

Sift flours, baking soda, baking powder and salt into a bowl. Set aside

Using a mixer fitted with paddle attachment (or use a handheld electric whisk), cream butter and sugars together until very light, about 5 minutes. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla.

Add dry ingredients and mix until just combined. Stir in the chopped chocolate. Dough may be used in batches, and can be refrigerated for up to 72 hours.

When ready to bake, preheat oven to 175°C. Line a baking sheet with parchment paper .
Scoop equal amounts of cookie dough on baking sheet, making sure that the cookies are spaced apart to allow for spreading while baking. Bake in the preheated oven for 18 minutes, for smaller cookies 15 minutes. Leave the cookies to cool slightly before transfering to a cooling rack.
